Zutaten:
- 2 Eggs (large)
- 2/3 Cup Milk
- 1 ½ teaspoons Salt
- 1/8 teaspoon Cayenne Powder
- 1 Cup Flour
- 1/2 Cup Cornmeal
- 1 Tablespoon Sugar
- 2 teaspoons Baking Powder
- 3 Cups Corn Kernels (fresh or thawed from frozen)
- 2 Tablespoons Scallions (chopped)
- 1 Cup Triple Cheddar Cheese Blend (colby jack cheese shredded)
- 1/4 Cup Oil (or more)
Arbeitsschritte:
- In a large bowl, whisk together the eggs, milk, salt and ground cayenne.
- Whisk in the flour, cornmeal. sugar and baking powder until just combined.
- Stir in the corn, scallions and cheese.
- Heat a cast-iron skillet over medium-low and add enough oil to generously coat the bottom of the skillet, about 1/4 cup.
- Once the oil is shimmering hot, add a heaping tablespoon of the batter to the skillet. Using the back of the spoon, flatten it into a round patty. Repeat until you have 3 to 4 fritters in the pan.
- Fry on each side until golden, about 2 minutes, then cook for an additional 2 minutes. Adding more oil as needed.
- Remove from the skillet and transfer to a paper towel-lined baking sheet. Repeat until you have used all the batter. Serve warm or at room temperature.
