- 1 (4 oz) can mild green chilies

Arbeitsschritte:
- Heat olive oil in a pot over medium-high heat.
- Dab beef dry with paper towels and season both sides of beef lightly with the sugar and a few pinches of salt. Break beef into 6 chunks. Place beef in pot (flat side down) and lightly press down for good contact. Let cook until nicely browned on bottom about 3 minutes.
- Turn beef and cook about 2 to 3 minutes then continue to break up and cook beef through. Transfer beef to a plate lined with paper towels and leave about 1 1/2 Tbsp rendered fat in pot.
- Carefully add bell peppers to pot (the fat can splatter). Let cook without moving about 3 minutes to get some color on them. Reduce heat to medium, add onions and cook tossing occasionally 5 minutes.
- Add garlic and saute 30 seconds.
- Add in chili powder, ancho chili powder, cumin, smoked paprika, coriander and black pepper to taste. Saute 10 seconds.
- Pour in beer (wine or vodka) while stirring and scraping up browned bits from bottom of pot. Pour in 1 cup broth, crushed tomatoes, and green chilies. Add beef base, cocoa powder and oregano. Stir mixture and bring to a simmer.
- Reduce heat to a gentle simmer (medium-low to low depending on your burner size), cover pot and let simmer 30 to 60 minutes stirring occasionally. Add more broth as needed to thin chili to desired consistency.
- Stir in kidney beans and pinto beans during the last 15 minutes of cooking.
- Let chili cool slightly and serve with toppings of choice.
