Zutaten:
- 1 cup freekeh grains
- 2 ½ cups water or broth
- Kosher salt
- Parsley, (for garnish)
Arbeitsschritte:
- Pick over and rinse the freekeh. Look through the grains and remove any debris or unwanted small stones. Rinse well a few times.
- Add the liquid. In a medium saucepan, combine the rinsed freekeh with 2 1/2 cups water or broth.
- Bring to a boil. Set the pan over medium-high heat and bring the liquid to a boil. Season lightly with kosher salt.
- Cover and simmer. Reduce the heat to low, cover, and simmer until the grains are tender but still slightly chewy. Cracked freekeh takes about 20 minutes, while wholegrain freekeh generally takes 35 to 40 minutes.
- Drain and fluff. Drain any liquid remaining in the pan, then fluff the freekeh with a fork. Taste and add more salt if necessary.
- Garnish and serve. Transfer to a serving bowl and garnish with chopped parsley, if using.
