Zutaten:
- 4 cups grape tomatoes, halved
- 1 clove garlic, crushed
- ¼ cup olive oil
- 1 tablespoon red wine vinegar
- ½ teaspoon pink Himalayan salt
- ¼ teaspoon pepper
- 1 tablespoon chopped chives
- 6 cups arugula
- ¼ cup shaved Parmesan
- ¼ cup toasted pine nuts
Arbeitsschritte:
- Add the halved tomatoes to a colander and drain in the sink for 15 minutes.
- In a small bowl, combine the crushed garlic, olive oil, red wine vinegar, salt, and pepper.
- Add the drained tomatoes and chives to a bowl with a lid. Pour over the dressing and stir.
- Cover and refrigerate for a minimum of 2 hours.
- When ready to assemble the salad, add the arugula to a large bowl.
- Toss with the marinated tomatoes and chives.
- Add the Parmesan and toss again.
- Top the salad with pine nuts and serve right away.
