Zutaten:
- beef dripping or oil, for greasing
- salt, to taste
- 4 medium eggs
- 150 mL whole milk
- 200 g plain flour
- honey, to taste
- black pepper, to taste
- salt, to taste
- 1 L beef broth
- 1 tablespoon dried oregano
- 1 tablespoon paprika
- 2 leeks, sliced
- 1 onion, sliced
- 6 small carrots, sliced
- 4 beef ribs
Arbeitsschritte:
- Season the beef short ribs with salt and pepper.
- Heat a large pan over medium-high heat and sear the short ribs until deeply browned on all sides. Remove and set aside.
- In the same pan, add the carrots, onion and leeks. Cook until lightly coloured, then stir in the paprika, dried oregano, salt and pepper.
- Transfer the beef and vegetables to a pressure cooker. Pour in the beef bone broth, secure the lid and cook under pressure for approximately 2 hours, until the beef is fall-apart tender. Follow the manufacturer's instructions for cooking and releasing pressure safely.
- Carefully remove the short ribs from the pressure cooker and set aside. Remove the bones if desired.
- Blend the cooking liquid and vegetables until smooth, then strain into a saucepan. Simmer until the gravy reaches your desired consistency. Season with honey, salt and pepper to taste.
- To make the Yorkshire pudding batter, blend the plain flour, milk, eggs and a pinch of salt until smooth. Strain the batter and leave it to rest.
- Preheat the oven to 220°C (200°C fan). Add a little beef dripping or oil to each section of a muffin tray and heat in the oven until very hot.
- Carefully pour the batter into each section, filling it approximately one-third full.
- Bake for 20–25 minutes until the Yorkshire puddings have risen and turned golden. Do not open the oven door during baking.
- Serve the tender beef short ribs with the crispy Yorkshire puddings and plenty of rich homemade gravy.
- Enjoy!
