Adam Liaw beef mince and vegetable soup recipe
This hearty soup is intended as a full meal, but it can also work as a starter.
Rezept
Kochzeit ca. 1 Stunden
Zutaten:
- 2 tbsp olive oil
- 250g beef mince
- 1 large brown onion, peeled and diced
- 1 carrot, peeled and diced
- 2 stalks celery, diced
- 2 garlic cloves, peeled and roughly chopped
- 2 zucchini, diced
- 1 potato, peeled and diced
- 1 cup tomato passata
- 400g can cannellini beans, drained
- 5 litres chicken stock
- 1 beef stock cube
- 1 tsp salt
- 60g baby spinach
- buttered sourdough, to serve
Arbeitsschritte:
- Heat the olive oil in a large saucepan over medium heat. Add the mince and fry until browned.
- Add the onion, carrot and celery and fry for about 6 minutes until fragrant.
- Add the garlic, zucchini and potato and fry for a further 5 minutes until the vegetables are softened.
- Add the passata, beans, stock, stock cube and salt and bring to a simmer. Continue to simmer, covered, for 30 minutes.
- Stir through the spinach and allow to wilt. Serve with the bread.
