• 25 cups freshly grated Parmesan
• 1/2 tsp freshly cracked black pepper
• 1 zucchini (small dice)
• 1 eggplant (small dice)
• 1 red bell pepper (small dice)
• 1/2 red onion (small dice)
• 3 cloves garlic (minced)
• 3 tbsp extra virgin olive oil
• 1 cup cherry tomatoes (halved)
• 1 tsp fresh thyme leaves
• Flaky sea salt
