Zutaten:

  • 1 cup whole milk
  • 1 cup water
  • 3 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1 cup yellow cornmeal
  • 2 large eggs
  • 1 teaspoon baking powder
  • 2 tablespoons sugar for a slightly sweeter version
  • Extra butter for serving

Arbeitsschritte:

  • Preheat the oven
  • Preheat your oven to 375°F (190°C). Grease a medium baking dish or cast-iron skillet.
  • Heat the liquids
  • In a saucepan over medium heat, combine the milk, water, butter, and salt. Bring just to a gentle simmer.
  • Cook the cornmeal
  • Slowly whisk in the cornmeal to avoid lumps. Stir continuously for about 4–5 minutes until thickened.
  • Cool slightly
  • Remove from heat and let the mixture cool for 5 minutes.
  • Add eggs and baking powder
  • Beat the eggs in a small bowl, then stir them into the cornmeal mixture along with the baking powder. Mix until smooth.
  • Bake
  • Pour into the prepared dish and bake for 30–35 minutes, or until puffed and lightly golden on top.
  • Serve warm
  • Spoon onto plates while warm and top with butter if desire
