Zutaten:
- 1 cup whole milk
- 1 cup water
- 3 tablespoons unsalted butter
- 1 teaspoon salt
- 1 cup yellow cornmeal
- 2 large eggs
- 1 teaspoon baking powder
- 2 tablespoons sugar for a slightly sweeter version
- Extra butter for serving
Arbeitsschritte:
- Preheat the oven
- Preheat your oven to 375°F (190°C). Grease a medium baking dish or cast-iron skillet.
- Heat the liquids
- In a saucepan over medium heat, combine the milk, water, butter, and salt. Bring just to a gentle simmer.
- Cook the cornmeal
- Slowly whisk in the cornmeal to avoid lumps. Stir continuously for about 4–5 minutes until thickened.
- Cool slightly
- Remove from heat and let the mixture cool for 5 minutes.
- Add eggs and baking powder
- Beat the eggs in a small bowl, then stir them into the cornmeal mixture along with the baking powder. Mix until smooth.
- Bake
- Pour into the prepared dish and bake for 30–35 minutes, or until puffed and lightly golden on top.
- Serve warm
- Spoon onto plates while warm and top with butter if desire
