Zutaten:
- 4 tablespoons olive oil, divided
- 3 cups whole grape or cherry tomatoes
- 3 cloves garlic, chopped
- 1 teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes
- ⅓ cup pitted kalamata olives, halved
- 1 (8-ounce) goat cheese log, chilled
- Zest from one lemon
- 2 tablespoons slivered fresh basil
- Baguette for serving
Arbeitsschritte:
- Preheat the oven to 375 F.
- Add 2 tablespoons of oil to a cast iron skillet and bring the heat to medium-high.
- Add the tomatoes and cook without stirring until the skins blacken and split, about 4 minutes.
- Cook for about 8 more minutes, stirring and pressing down to burst open each tomato.
- Remove the skillet from the heat and stir in the remaining olive oil, garlic, oregano, salt, black pepper, and red pepper flakes to the hot pan.
- Stir in the olives.
- Place the goat cheese log in the center of the skillet.
- Put the skillet in the oven and bake until the cheese is soft and warmed through, 12 to 15 minutes.
- Sprinkle with the lemon zest and basil.
- Serve with baguette slices straight from the pan or transfer to another serving dish.
