Zutaten:
- 3 c. 1-inch cornbread cubes (about 10 oz.)
- 1 (1-pound) loaf Italian or French bread, cut into 1-inch cubes (about 10 cups)
- 4 tbsp. salted butter, plus more for the baking dish
- 1 lb. breakfast sausage, casings removed if links
- 3 stalks celery, diced
- 1 onion, diced
- 4 to 6 cups low-sodium chicken broth, plus more if needed
- 3/4 c. dried cranberries
- 1/2 c. fresh parsley, chopped
- 1 1/2 tsp. chopped fresh sage
- 3/4 tsp. ground thyme
- 1 tsp. kosher salt
- 1/2 tsp. black pepper
Arbeitsschritte:
- Spread out all the bread cubes on 2 baking sheets, cover with a dish towel and let dry out until crisp, 24 to 48 hours.
- Preheat the oven to 375˚ and butter a 9-by-13-inch baking dish.
- Cook the sausage in a large skillet over medium heat, breaking up the meat with a wooden spoon, until browned and cooked through, 8 to 10 minutes. Remove to a plate.
- Add the butter to the drippings in the skillet and melt over medium heat. Add the celery and onion and cook until soft, 3 to 4 minutes. Stir in 4 cups chicken broth, then add the dried cranberries, parsley, sage, thyme, salt, and pepper. Bring to a simmer, then reduce the heat to medium-low; cook until the cranberries are softened, about 5 minutes. Remove from the heat.
- Combine the bread and sausage in a large bowl. Slowly ladle in the broth mixture, tossing, until evenly moistened. Add more broth if needed.
- Transfer the dressing to the prepared baking dish. Bake until golden and crisp on top, 35 to 40 minutes.
