Zutaten:
- 4 small corn tortillas
- 1/2 cup vegetable oil
- 2 ripe avocados
- 3 tablespoons chopped chives
- 1 lime (juiced)
- 1 cup refried beans
- 2 ears of corn (grilled and kernels removed)
- 1/2 pound medium sized shrimp (peeled and de-veined)
- 1 tablespoon Dalkin&Co Chile Lime Seasoning
- 1/2 cup pico de gallo
- Kosher salt and freshly cracked black pepper to taste
Arbeitsschritte:
- In a skillet, heat the vegetable oil over medium-high heat until almost smoking. Fry the tortillas one at a time for about 2 minutes per side until golden and crispy. Remove with tongs and drain on a paper towel-lined plate. Season lightly with salt while still hot.
- In a medium bowl, mash together the avocados, chives, and lime juice until creamy but still slightly chunky. Season with salt and pepper and set aside.
- Pat the shrimp dry with paper towels and toss with the Chile Lime seasoning, salt, and pepper. Heat a skillet over medium-high heat with a drizzle of oil. Cook the shrimp for 2 to 3 minutes per side until pink and just cooked through. Remove from the heat immediately.
- To assemble, spread about 1/4 cup of warm refried beans on each tostada shell. Sprinkle the charred corn over the beans, then add a generous layer of mashed avocado. Spoon the pico de gallo over the top.
- Finish with several shrimp on each tostada, season with salt and pepper if needed, and serve immediately.
