Zutaten:
- 2 lbs boneless pork loin ((or pork tenderloins, see notes))
- 1½ tsp salt ((to taste))
- 1 tsp paprika ((or smoked paprika))
- ½ tsp ground black pepper ((to taste))
- 1-2 Tbsp beef tallow ((or cooking oil, optional for searing))
- 1 small yellow onion ((finely diced))
- 3 tsp garlic ((minced))
- 1 cup chicken broth
- 1 cup heavy cream
- ½ cup sun-dried tomatoes ((roughly chopped))
- 1 tsp Italian seasoning ((see recipe))
- 1 tsp fennel seeds ((crushed or ground))
- ½ cup Parmesan cheese ((freshly grated))
- 2 cups baby arugula ((or baby spinach))
Arbeitsschritte:
- Season & Sear
- Pat the 2 lbs boneless pork loin dry. Combine 1½ tsp salt, 1 tsp paprika, and ½ tsp ground black pepper, then rub evenly over the pork.
- Sear (optional): Heat 1-2 Tbsp beef tallow or oil in a skillet over medium-high heat. Sear pork on one side, flip, add 1 small yellow onion, and sear the other side. Stir in 3 tsp garlic during the last minute until fragrant, then transfer pork to the slow cooker.
- Pour a splash of 1 cup chicken broth into the skillet and scrape up the browned bits.
- Slow Cook
- Transfer skillet contents to the slow cooker with remaining broth, 1 cup heavy cream, ½ cup sun-dried tomatoes, and 1 tsp Italian seasoning. Sprinkle crushed 1 tsp fennel seeds over the pork and stir the sauce around the roast.
- Cover and cook on LOW for 3-4 hours or HIGH for about 2 hours (until 145°F/63°C).
- Finish & Serve
- Transfer pork to a cutting board to rest 3 minutes. Stir ½ cup Parmesan cheese and 2 cups baby arugula into the slow cooker sauce. Cover and cook on HIGH for 5-10 minutes until melted and wilted.
- Slice pork, transfer to a platter, and spoon the creamy Tuscan sauce over top.
